- Blackberry Filling:
- 2 cups blackberries, fresh or frozen
- 2 tbs maple syrup
- 1 tbs lemon juice
- 2 tsp tapioca starch
- 1 tbs coconut oil, melted
- 1/2 tsp cinnamon
- 1 cup toasted quinoa (*instructions below)
- 1 cup rolled oats
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/3 cup coconut sugar
- 3/4 cup coconut oil
- 1/2 cup unsweetened shredded coconut (reserve for topping only)
