I was in the mood for a baking experiment when I threw this delicious bread together. I wanted to make cornbread, but not the standard cornbread fare -- and boy was I happy with this creation!

From the moment I whipped this up in the food processor, I had an immense amount of trouble not eating it all! It is just that good.

Having lived in the Southwest U.S. for 10+ years, I've grown quite fond of its regional cuisine. Hatch Green Chile season for instance, is one incredible beauty of living here (and something you will hear much more about come late summer!).
New Mexico dried chile pods are matured (hence, red) Hatch Green Chiles! They vary in spiciness, but always have a slight smokiness that I think makes for a wonderfully flavorful sauce.
I like using these chiles for the purpose of making a sauce for cheese and onion enchiladas; but please do know that it is also a great sauce for many applications -- burritos & Mexican-style rice being a few of them!
For a quick, easy, ridiculously tasty sauce, that stores and freezes well, and can be used a myriad of ways -- look no further; this will not disappoint!

I really had a lot of fun throwing these together. I was craving peanut sauce, but decided to kick it up a notch by adding coconut and a variety of spices until I had something with exciting depths of flavor -- and boy did these blow me away. Soooo good!
And, the texture is very satisfying as well! Crispy, toasty rice yumminess on the outside, and a sweet & spicy creamy coconut peanut center. Divine.
Top it off with a favorite condiment, and you will be in food bliss in no time -- I promise!

Not only is it magnificently tasty, it is amazingly versatile too. I've used it as a dip, a pizza sauce, and a topping for quinoa, and all were out of this world delicious!
And, did you know that cilantro has many amazing superpower medicinal benefits? Not only does it contain a lot of antioxidants, it also lowers bad cholesterol levels & detoxifies heavy metals from the body! How can you go wrong there?!
