I really wanted to create something that would highlight and accentuate the beauty of this product, and this recipe did not fall short! Keeping in line with its ingredients, I decided to roast some polenta (corn) cakes, and top it off with some cumin flavored chickpeas.
This turned out to be an amazingly delicious creation, full of varying textures, depth of flavors, and not to mention -- high protein power!

Having lived in the Southwest U.S. for 10+ years, I've grown quite fond of its regional cuisine. Hatch Green Chile season for instance, is one incredible beauty of living here (and something you will hear much more about come late summer!).
New Mexico dried chile pods are matured (hence, red) Hatch Green Chiles! They vary in spiciness, but always have a slight smokiness that I think makes for a wonderfully flavorful sauce.
I like using these chiles for the purpose of making a sauce for cheese and onion enchiladas; but please do know that it is also a great sauce for many applications -- burritos & Mexican-style rice being a few of them!

I threw this delightful little cake together in celebration of my little one turning 18 months old.
I wanted something without refined sugar, relatively healthy, and with one of his favorite flavors (banana!).
I was incredibly happy with how it turned out! Moist, fluffy, and with an almost sponge-like texture. The flavor has just the right amount of banana, a slight touch of cinnamon, and only a subtle bit of sweetness. It is perfect!
Being that it is not overpoweringly sweet, we ate the leftovers for breakfast. It is ridiculously good! (And, so very easy to make!)
