This is what I would consider to be a comfort food dish. I threw it together in the midst of a craving for a peanut sauce, and it certainly did quench my desires!
Creamy, spicy peanut sauce with a touch of sweetness, drizzled over brown rice noodles topped with a perfect blend of vegetables--it is amazingly delish!

Spicy Veggie Confetti Peanut Sauce Noodle Bowl (Gluten Free, Vegan)
Spicy Peanut Sauce
Approx. 3/4 cup
3/8 cup salted peanuts
2 tbs sesame oil
2 garlic cloves
1/4 tsp ginger, ground
1 Serrano pepper
1 medjool date, pitted
1/3 cup water
1 tbs apple cider vinegar
In a food processor, blend peanuts & sesame oil until smooth.
Add remaining ingredients & process until evenly mixed.
Use right away or store in an airtight glass container in the fridge for up to 2 weeks.
Brown Rice Pasta w/ Veggie Confetti
12 oz brown rice pasta (I used Jovial's Penne Rigate)
1/2 red onion, finely chopped
2 mini sweet bell peppers, finely chopped
1 garlic clove, minced
1 cup peas, steamed
sesame seeds & dried cilantro for garnishing
Cook brown rice noodles until al dente. Drain & set aside.
Steam peas, set aside.
In a sauce pan over medium heat saute onion, garlic & peppers in a dash of sesame oil until all begins to brown.
Fill bowl(s) with pasta, sprinkle with veggie confetti, drizzle with
peanut sauce, garnish with sesame seeds & cilantro! Serve warm or cold.
