They have a wonderful crisp quinoa-oat crust, an ooey gooey blackberry filling, and a crunchy coconut topping -- how can you go wrong?!

Oat & Toasted Quinoa Blackberry-Coconut Squares (Gluten Free, Vegan)
Makes: 9 bars
2 cups blackberries, fresh or frozen
2 tbs maple syrup
1 tbs lemon juice
2 tsp tapioca starch (I use Bob's Red Mill)
1 tbs coconut oil, melted
1/2 tsp cinnamon
1 cup toasted quinoa (*instructions below)
1 cup rolled oats (I use Bob's Red Mill)
1/2 cup almond flour (I useBob's Red Mill)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/3 cup coconut sugar (I use Madhava)
3/4 cup coconut oil
1/2 cup unsweetened shredded coconut (reserve for topping only)
Preheat oven to 350°F.
Prepare berry filling by combining all ingredients in a large mixing
bowl & stirring until all is well combined. Set aside while you prepare
*On a parchment lined cookie sheet, spread your uncooked quinoa out in
a single layer. Toast in your preheated oven for 8-10 minutes, or until
beginning to turn golden. Remove & let cool. Keep oven on.
To prepare your crust and topping, combine all ingredients except the
Use your fingers to mix and mash until all is very well combined.
Line a round or square 8" baking dish with parchment paper.
Take half of your crust/topping mixture and firmly press it into your
parchment lined pan until it is a uniform & even layer. Pre-bake this
crust for 10 minutes.
Add shredded coconut to your remaining half of topping mixture. Combine well.
Removed pre-baked crust from oven, and let cool a few minutes.
When slightly cooled, pour your blackberry filling mix on top & spread
until evenly covered.
Using your hands, pour your topping mixture onto berry filling, and
smooth out until evenly covered & firmly packed.
Bake for 40 minutes, or until all is firm & beginning to turn golden.
Let cool before slicing & serving.
