These gluten free thumbprint jam cookies are deliciously chewy and quite healthy, with no added refined sugars.
Fun to make and very kid friendly, these cookies also make a delightful treat for your sweeties on Valentine's Day (or any occasion)!
Merry Berry Thumbprint Jam Cookies (Gluten Free)
(Perfect for Valentine's Day!)
Makes: 15 cookies
2 tbs chia seeds
1/4 cup ground cashews
1/3 cup all purpose gluten free flour (I use Bob's Red Mill)
3/8 cup coconut flour (I use Bob's Red Mill)
1/2 tsp baking powder
1/8 cup vanilla Greek yogurt
1/8 cup almond milk (I use Pacific Natural Food's unsweetened vanilla)
1/4 cup maple syrup
1/4 cup frozen mixed berries
1/3 cup blackberry jam (I use Crofter's Blackberry Spread)
Preheat oven to 350°F.
Blend all of the above ingredients (except for the jam) in a food processor until a smooth dough forms.
Roll dough into teaspoon sized balls and place on a parchment lined baking sheet. Using your fingers or a small spoon, create an
indentation in the center of each cookie. Fill each indentation with blackberry jam.
Bake for approx. 18 minutes or until cookies are firm and bottoms are beginning to brown.
