This is an incredibly healthy, tasty & satisfyingly filling salad -- perfect for these warmer days!
From the refreshing crunch of carrots & sunflower seeds, to the creamy goodness of avocado & feta cheese, with subtle hints of spice & orange -- this salad will transport & delight the taste buds!
High in protein and many essential vitamins & nutrients, with a perfect balance of textures & flavors, this salad will become a fast favorite in no time. . .
Chickpea & Avocado Salad with a Spiced Orange Vinaigrette Dressing (Gluten Free, Vegan Option)
1 cup chickpeas, cooked & drained (I use Bob's Red Mill Garbanzo Beans)
1 avocado, diced
1/2 cup feta cheese, chopped (omit for Vegan Option)
1/2 cup carrots, thinly sliced into coins
1/4 cup fresh cilantro, chopped
1 tbs sunflower seeds, salted
1 garlic clove, minced
1/4 tsp red chili flakes
1/4 tsp ground turmeric
1/4 tsp Hungarian paprika
1/4 tsp salt
1/8 tsp celery seed
1/2 orange, juiced
1 tbs olive oil
*Corn tortillas (optional)
In a large bowl combine salad ingredients, gently toss.
In a small bowl, combine dressing spices. Squeeze on top the juice of half an orange, and drizzle with olive oil. Whisk to combine.
Pour dressing over salad & serve immediately or chill covered in
fridge until ready to serve. Store covered in fridge for up to 5 days.
*Note: My favorite way to eat this salad? Wrapped in a corn tortilla!
