These little breakfast bars are hearty, healthy, filling and make a delicious start to any day!
From the chewiness of the oats, to the deliciousness of the apple, and the subtle notes of ginger & cloves, these delightful breakfast squares are certain to satisfy your palate!
Chewy Apple & Oat Breakfast Squares (Gluten Free)
Makes: 9 bars
1 cup oat flour (blend rolled oats until a fine powder forms)
1/2 cup rolled oats (I use Bob's Red Mill)
4 tbs coconut sugar (I use Madhava) (Omit for sugar free / kid friendly version)
1 tsp baking powder
1 tsp baking soda
1 tsp ground ginger
1/2 tsp salt
1/4 tsp ground cloves
1/2 cup plain Greek yogurt
2 eggs, beaten
1 tsp vanilla extract
1 peeled apple, diced
Preheat oven to 350°F. Line an 8 x 8 pan or dish with parchment paper, set aside.
In a large mixing bowl, combine dry ingredients. Stir until evenly mixed.
In another mixing bowl, combine wet ingredients (except apple). Mix until smooth.
Combine dry & wet ingredients until uniformly combined. Gently fold in diced apple.
Pour batter into your parchment lined pan. Bake for 25-30 minutes, or until golden & firm.
Remove from oven and let cool before slicing into squares.
